Delightful Vegan Raspberry Sugar Cookie Skewers: A Sweet Surprise for Every Occasion
Last month, our family was swept up in the enchanting world of an annual holiday ballet performance. There’s truly nothing quite like witnessing a stage full of tiny dancers, some as young as two, twirling in their sparkly costumes with delicate buns adorning their heads. The air backstage, where I happily volunteer, is a delightful mix of chaotic energy and pure childlike glee—a reflection of the girls’ excitement to perform and the overwhelming anticipation of Christmas. It’s a tradition we cherish, and after each show, we love to present the dancers with flowers and a special treat. The simple surprise, the way their faces light up with joy, is a reward in itself. For us, sugar cookies have always been a staple for such celebratory moments, and these dainty, bite-sized heart cookies, artfully skewered with fresh raspberries, were an absolute hit with the girls.
Simplifying Sweetness: The Magic of Cookie Mixes
When Betty Crocker® approached me to create a unique recipe using their quick cookie mix, these raspberry cookie skewers immediately sprang to mind. They are not only perfect for holiday celebrations but also an ideal, charming treat for Valentine’s Day or any occasion that calls for a touch of sweetness. Some of you might recall my popular vegan sugar cookie recipe from a few years back, which garnered significant attention for its innovative use of coconut oil instead of traditional butter and eggs, resulting in a flavor that truly delighted my readers. While I adore baking from scratch, the reality of busy periods, especially during the festive holiday season or any bustling family time, often makes it impractical. This is precisely where smart shortcuts come into play, and there’s absolutely no shame in embracing them.
Betty Crocker® cookie mix products offer an incredibly easy and efficient way to whip up delicious desserts without the usual fuss. Just recently, during a frantic dash through Walmart to grab some last-minute ballet tights (why do little tights tear and stain so quickly?!), my daughter spotted a bag of cookie mix and instinctively tossed it into our cart. It was a timely reminder of the convenience these mixes provide. What many people don’t realize is just how versatile these mixes can be. With a few simple tweaks, you can even vegan-ize many standard cookie mixes! This discovery has been a game-changer not only for vegans and “sometimes vegans” like myself but also for accommodating friends and family with dairy and egg allergies. The sheer ease of combining just three ingredients to create a delicious dough in under a minute is simply unbeatable, allowing you to spend more time enjoying the moments that matter.
Crafting Your Vegan Cookie Skewers: A Step-by-Step Guide
The beauty of these skewers lies in their simplicity and charm. We used an adorable, itty-bitty heart-shaped cookie cutter to punch out our shapes. Once baked, the dough expands slightly, so we found that one heart per toothpick worked best, ensuring each skewer was a perfect, delicate treat. This method also makes them incredibly easy to handle for little hands and ideal for party platters.
To elevate these humble cookies, I piped on a delicate drizzle of melted dairy-free chocolate and nestled a fresh raspberry onto each skewer. The combination of the sweet cookie, rich chocolate, and tart raspberry creates a harmonious flavor profile that’s simply irresistible. They truly are the perfect petite treat for petite hands, even those with questionable manicures after a day of play!
Bringing Joy: Simple Surprises for Busy Lives
In the whirlwind of daily life and the rush of special seasons, finding moments to create simple surprises for our loved ones is incredibly important. These cookie skewers are more than just a dessert; they’re a gesture of love, a delicious moment of delight that requires minimal effort but yields maximum smiles. Whether it’s for a school event, a playdate, a holiday gathering, or just a Tuesday afternoon treat, they are sure to be a cherished surprise. They are also highly customizable—consider different fruit pairings, sprinkles, or even a hint of citrus zest in the cookie dough for variations.
A Note for Strict Vegans: Please be aware that while we are adapting a conventional cookie mix to be vegan-friendly, some granulated sugar can be processed with bone char, making it unsuitable for strict vegans. For a 100% certified vegan sugar cookie recipe that addresses this, I highly recommend trying this recipe which uses alternative sugar sources.

Ingredients
- 1 (17.5 oz.) package Betty Crocker® sugar cookie mix
- 1/2 cup coconut oil (not melted)
- 1/4 cup unsweetened almond or coconut milk
- 1 cup dairy-free chocolate chips, melted
- Fresh raspberries, for garnish
Instructions
- Prepare the Oven and Baking Sheet: Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or a silicone mat for easy removal and cleanup.
- Mix the Cookie Dough: In a medium-large mixing bowl, combine the Betty Crocker® sugar cookie mix, solid (not melted) coconut oil, and unsweetened almond or coconut milk. Mix thoroughly until the ingredients come together to form a cohesive ball of dough.
- Roll, Cut, and Chill: Lightly flour a clean surface. Roll the dough to approximately 1/4 inch thickness. For easier handling, refrigerate the rolled dough for about 15 minutes until firm. Use your desired cookie cutters (heart shapes work wonderfully here) to cut out shapes and carefully place them on the prepared cookie sheet, ensuring they are about 2 inches apart. Gently skewer each cookie with a toothpick before baking. Refrigerate the skewered cookies again for another 10 minutes to help them hold their shape.
- Bake and Decorate: Bake the cookies until they are golden brown, which typically takes about 7-9 minutes, depending on their size and your oven. For crispier cookies, aim for a darker golden color; for chewier cookies, remove them when they are lighter golden. Allow the cookies to cool completely on a wire rack. Once cooled, melt your dairy-free chocolate chips. Using a piping bag or a sandwich bag with a small corner snipped off, pipe a decorative line or drizzle along the perimeter or across the cookies. While the chocolate is still soft, gently add a fresh raspberry to each cookie skewer. Serve and enjoy!
