Green Monster Quesadillas Recipe

These playfully designed quesadillas, resembling friendly monster faces, are a fantastic way to engage children in the kitchen and encourage them to enjoy nutritious foods, especially those vibrant green veggies!
Ingredients:
- 4 small organic corn tortillas (or flour tortillas for a softer texture)
- 1 tablespoon butter or coconut oil
- Favorite cheese, sliced or grated (cheddar, Monterey Jack, or a blend works well)
- 1 cup prepared or store-bought guacamole
- Sliced olives for monster eyes
- Sliced bell pepper (any color!) for a fun monster mouth
- Any other veggies to get creative with, such as cucumber slices, shredded carrots, or spinach
Instructions:
- Adults Handle the Frying: While the children are busy designing their monster faces, an adult should prepare the quesadillas. Heat the butter or coconut oil in a large frying pan over medium heat. Place one tortilla in the pan and generously top it with your chosen cheese. Cover it with a second tortilla. Cover the pan with a lid to help the cheese melt quickly and evenly. Once the bottom tortilla is golden brown and crisp, carefully flip the quesadilla. Cook until the second side is also golden. If making more quesadillas, repeat the process, adding a little more butter or oil if needed.
- Kids Create the Monsters: Once the quesadillas are cooked, remove them from the frying pan and allow them to cool slightly to prevent burns. This is the children’s cue to take over!
