  • 1/2 cup coconut water or orange juice
  • 1 cup prepared chia pudding
  • 1/2 cup granola
  • 1/3 cup diced berries (Optional, I used strawberries, raspberries, blueberries)

Instructions

  1. Run the acai packs under warm water for a few seconds to soften slightly, then break each into a few chunks, and carefully remove from the plastic wrapping. Place these acai chunks into your blender along with the frozen mango, frozen pineapple, and the banana. Add the coconut water or orange juice to the blender. Start with 1/2 cup and add just enough liquid to ensure the mixture blends smoothly; you may need a little more depending on your blender and the consistency of your frozen fruit. Blend until you achieve a completely smooth and creamy acai smoothie mixture.
  2. Once your acai smoothie base is ready, it’s time to assemble the popsicles. Carefully layer the acai mixture, the prepared chia pudding, and the granola into your ice pop molds. You can alternate layers or swirl them for a marbled effect. For extra appeal and a fresh burst of flavor, gently push a few pieces of your diced berries (strawberries, raspberries, blueberries, or a mix) into the pops as you layer. Insert the popsicle sticks firmly into the molds. Transfer the filled molds to the freezer and freeze until they are completely solid, which will take a minimum of 4 hours, but ideally overnight for best results.
