Embracing Spring: Our Edible Garden Adventures & A Delightful Zucchini Pizza Recipe

Spring has truly unfurled its vibrant colors and renewed energy, signaling the perfect time to look forward to the abundance of summer and begin cultivating our favorite crops. After a winter lull, where my edible garden often becomes a buffet for the local rabbits and chickens, the arrival of spring fills me with an unparalleled excitement to get my hands back in the soil. This week marks the beginning of our enthusiastic planting efforts, and I’m thrilled to share our latest garden additions with you. As a special treat, my dear friend Danielle from Delightful Mom has graciously contributed a mouth-watering recipe that I simply cannot wait to prepare with our homegrown zucchini – a true testament to the joy of farm-to-table living, even on a small scale.

Our home renovation journey continues, and with our kitchen cabinets finally being installed today, the dream of cooking with fresh, garden-picked ingredients is closer than ever. Until then, Danielle’s recipe is a wonderful inspiration, keeping our culinary spirits high. I promise a full kitchen update very soon!

Cultivating Our Summer Bounty: A Guide to Spring Planting

There’s an undeniable magic in watching tiny seeds and seedlings transform into flourishing plants, offering fresh, nutritious produce right from your backyard. For us, spring gardening is more than just a hobby; it’s a commitment to healthier living, sustainable practices, and the pure joy of connecting with nature. This season, we’ve carefully selected a range of plants that promise both abundant harvests and delightful flavors, perfect for sharing with family and friends.

Zucchini and Cucumber: The Prolific Power Duo for Every Gardener

In one of our 4-foot square planter boxes, we’ve nestled a couple of zucchini plants alongside a thriving cucumber seedling. While they may appear as delicate babies now, don’t let their size fool you; these plants are legendary for their rapid growth and incredibly generous yields. Zucchini, in particular, is often hailed as a beginner gardener’s dream. It’s remarkably easy to grow, requires minimal fuss, and before you know it, you’ll be harvesting more zucchini than you ever thought possible! The key to success with these vigorous growers is providing ample space. Both zucchini and cucumber vines tend to spread extensively, so ensure they have plenty of room to stretch out, or consider vertical trellising for cucumbers to save ground space.

Tips for Growing Bountiful Zucchini and Cucumbers:

  • Sunlight is Key: Both plants thrive in full sun, needing at least 6-8 hours of direct sunlight per day.
  • Rich, Well-Drained Soil: Amend your soil with compost to ensure it’s rich in nutrients and drains well.
  • Consistent Watering: Keep the soil consistently moist, especially during flowering and fruiting. Avoid overhead watering to prevent powdery mildew.
  • Spacing Matters: Give zucchini plants at least 2-3 feet of space between them. For cucumbers, consider bush varieties for smaller spaces or trellis vining types for vertical growth.
  • Pest and Disease Management: Keep an eye out for squash borers and powdery mildew. Organic solutions like neem oil or baking soda sprays can be effective.
  • Harvest Regularly: For zucchini, harvest when they are 6-8 inches long for the best flavor and tenderness. Frequent harvesting encourages more production. Cucumbers are best picked when firm and green.

Sweetness from the Tropics: Our Pineapple Guava Tree

Last year, we introduced a wonderful addition to our edible landscape: a pineapple guava tree. This beautiful evergreen shrub is not only ornamental with its unique flowers but also produces deliciously sweet fruit that my children – and I – adore! The flowers, with their striking pink and white petals and edible stamens, have just begun to bloom, attracting a delightful array of bee friends to our garden. These blossoms are the precursors to the fruit, which we eagerly anticipate harvesting towards the end of the year. Pineapple guavas offer a tropical, aromatic flavor profile, a delightful blend of pineapple, guava, and mint. They are incredibly versatile, perfect for fresh eating, jams, jellies, or even added to smoothies.

Caring for Your Pineapple Guava Tree:

  • Climate: Hardy in USDA zones 8-10, they tolerate a range of conditions but prefer mild winters and hot summers.
  • Sunlight and Soil: Full sun to partial shade, in well-drained soil. They are relatively drought-tolerant once established.
  • Pollination: Some varieties are self-fertile, but planting two or more can increase fruit production.
  • Pruning: Light pruning can help maintain shape and encourage fruit set.

Tomato Treasures: A Bounty of Flavor for Every Palate

No summer garden is complete without the juicy, sun-ripened goodness of tomatoes! Our tomato plants also found their new homes this week. While they require a couple of months to mature, the anticipation of their vibrant, flavorful fruit by June makes the wait entirely worthwhile. This year, our selection boasts a delightful mix of old favorites and an exciting new discovery:

  • Sweet 100s: These classic cherry tomatoes are incredibly prolific, producing clusters of small, super-sweet fruits perfect for snacking, salads, or adding a pop of flavor to any dish.
  • Costoluto Genovese: An heirloom Italian variety known for its deeply ribbed, irregular shape and rich, intense flavor. Ideal for sauces, slicing, and fresh eating.
  • San Marzano: The undisputed king of paste tomatoes, San Marzano offers a firm, meaty flesh with few seeds, making it exceptional for canning, sauces, and sun-drying.
  • Tigerella: Our exciting new addition! Pictured above, Tigerella is a striking heirloom variety celebrated for its distinctive red and gold stripes and a wonderfully tangy-sweet flavor. It’s a true showstopper in salads and on platters.

Secrets to Growing Phenomenal Tomatoes:

  • Staking or Caging: Provide strong support early on to prevent branches from breaking under the weight of the fruit.
  • Deep and Consistent Watering: Water at the base of the plant, deeply and regularly, especially during dry spells. Inconsistent watering can lead to blossom end rot.
  • Pruning: Remove suckers (small shoots that emerge between the main stem and a leaf branch) to direct energy into fruit production.
  • Fertilization: Use a balanced fertilizer with a slightly higher potassium content once fruits begin to set.
  • Pest Watch: Keep an eye out for common pests like hornworms and aphids, and address them promptly with organic pest control methods.

It’s truly inspiring to look back at photos of our summer garden from last August, overflowing with vibrant life. It’s a vivid reminder that those tiny little zucchini and cucumber plants we’ve just put in the ground will, with a little care and sunshine, grow into something just as magnificent and abundant. The transformation from a few small seedlings to a prolific harvest is one of gardening’s greatest rewards.

Zucchini Goat Cheese Pizza Recipe

Recipe Courtesy of Delightful Mom

Ingredients:

  • 1 prepared pizza dough (for a homemade option, check out Danielle’s recipe here)
  • 4 oz. fresh goat cheese, softened
  • 3 oz. Gouda cheese, shredded (optional, but adds a lovely nutty depth)
  • 1 Tbsp. fresh lemon juice
  • 1 medium zucchini, thinly sliced (a mandoline slicer works wonders for even slices)
  • 1/2 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 4 Tbsp. high-quality olive oil, divided
  • 1 tsp. fresh thyme leaves, separated (finely chopped)

Instructions:

  1. Preheat your oven to 400°F (200°C), or follow the specific temperature recommended for your prepared pizza dough.
  2. If making homemade dough, prepare it according to your chosen recipe. For store-bought dough, lightly spray your pizza stone or baking sheet with a non-stick baking spray or dust with a little cornmeal. Roll the dough out to your desired thickness and shape. Set it aside while you prepare the toppings.
  3. In a small mixing bowl, combine the softened goat cheese with 1 tablespoon of fresh lemon juice and half a teaspoon of fresh thyme. Mix until thoroughly combined and creamy. This will be your flavorful base.
  4. In a separate bowl, prepare the zucchini marinade. Add 2 tablespoons of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and the remaining 1/2 teaspoon of fresh thyme. Add the thinly sliced zucchini to this bowl and gently toss until each slice is lightly coated with the aromatic oil and seasonings.
  5. Carefully spread the goat cheese mixture evenly over your pizza dough, leaving a small border for the crust. If you’re adding Gouda, sprinkle it over the goat cheese layer now.
  6. Arrange the marinated zucchini slices in a beautiful circular pattern over the cheese. Don’t be afraid to overlap slightly for a fuller topping.
  7. Using a basting brush, lightly brush the top of the zucchini and the exposed crust with any leftover zucchini marinade. This step adds extra flavor and helps the crust become golden and crispy. If you don’t have enough marinade left, a drizzle of fresh olive oil will do the trick.
  8. Bake in the preheated oven for approximately 20 minutes, or until the crust is golden brown and the zucchini is tender-crisp. Check halfway through the baking time; if your zucchini appears to be drying out, baste it with a little more olive oil to keep it moist and flavorful.
  9. Remove from the oven, let it cool for a few minutes, slice, and serve immediately. Enjoy the fresh flavors of your garden!
