- 1 tablespoon extra virgin olive oil
- 8 oz. baby Bella mushrooms, quartered or sliced
- 1 small yellow onion, diced
- 3 carrots, sliced crosswise into coins
- 1 bunch celery, sliced crosswise
- 3 cloves garlic, minced
- 1 teaspoon chopped fresh thyme leaves
- 1 teaspoon sea salt
- ½ teaspoon freshly cracked black pepper
- ½ head large green cabbage, shredded
- 1 (15 oz.) can diced tomatoes
- 32 oz. favorite vegetable broth
- 1 cup fresh Italian parsley, roughly chopped (for garnish)
Instructions (Stovetop Method)
- Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the quartered or sliced mushrooms and sauté, stirring occasionally, until they have released their moisture and started to brown and soften, which typically takes about 5 minutes.
- Add the diced onion, sliced carrots, sliced celery, minced garlic, fresh thyme leaves, sea salt, and freshly cracked pepper to the pot. Continue to sauté these aromatics and vegetables for another 5 minutes, or until they begin to soften and become fragrant.
- Stir in the shredded cabbage and sauté for just one minute, allowing it to begin to wilt slightly. Then, pour in the diced tomatoes (undrained) and the vegetable broth. Stir everything together thoroughly to combine all the ingredients.
- Increase the heat to bring the soup to a gentle simmer. Once simmering, reduce the heat to low, cover the pot, and cook for approximately 30 minutes, or until the cabbage and all the vegetables are tender. Check for seasoning and add more broth or water as needed if you prefer a thinner consistency (you may need about a cup). Season to taste with additional salt and pepper; for a spicy kick, I often add a generous amount of freshly cracked pepper.

Please note that the Instant Pot will take approximately 15-17 minutes to build pressure before the countdown timer begins.
- Once the cooking cycle is complete, allow the pressure to naturally release for 5 minutes (NPR 5). After 5 minutes, carefully, using an oven mitt or towel, manually release any remaining pressure by turning the valve to ‘Venting’ until the float valve drops.
